Valentine’s day is coming right up, since I’m single I’m preaching self love this month.lol One of the best ways to practice self love in winter is it to eat body fueling food despite the urge to consume unhealthy comfort foods. winter months are synonymous with cozy couch nights and you really do need a  tasty treat. I don’t believe that deprivation is a sustainable way to stay healthy, so I’ve come up with a nutrient dense dessert to satiate the cravings. Chocolate is a girls best friend, well super dark chocolate is. Since true chocolate from a cocoa bean is a fruit, it’s packed skin brightening with antioxidants! If you’re buying 80% cocoa or higher chocolate you are truly getting essential nutrients in.  With these simple dark chocolate truffles you can have your theoretical cake and eat it too.

INGREDIENTS

RECIPE

    1. Put 10 ounces of the chocolate, salt, and the coconut creme in a small bowl. Microwave the mixture in 30-second intervals, stirring between each interval, until the mixture is completely smooth and combined.. cover the bowl with plastic wrap and let it chill in the fridge for at least 2 hours.
    1. once the chocolate mixture has chilled, scoop out tablespoon-sized chunks and roll them into smooth balls. place the balls on a baking sheet lined with waxed paper and let them chill in the fridge for at least 30 minutes.
    1. put the rest of the chocolate (5 oz) in a small bowl with the oil. microwave the bowl in 30-second intervals, stirring between each interval, until the chocolate is completely melted and smooth. you can also melt the chocolate over a double boiler if you want.
    1. Smash up the dehydrated raspberries and set them aside
    1. Drizzle your warm chocolate (I drizzled with a knife) over the chilled truffle balls on the waxed paper-lined baking sheet, sprinkle on raspberry bits immediately
  1. Put the truffles back into the fridge for at least 30 minutes for the chocolate to harden. Refrigerate them until you’re ready to serve.
