I’m beyond excited to share one of my favorite eat to glow recipes, Roasted Kabocha with Molé Sauce. I’m a sucker for squash, kabocha is my favorite, it’s the sweetest richest variety out there. I found my favorite squash at the farmers market and decided to use it as a base for one of my favorite Mexican sauces, molé! Molé is a vegetarian sauce with an undeniable meaty richness, when slathered on veggies it creates a filling savory dish. This molé has a lot of ingredients but it’s not as tricky as it looks, it just requires tossing things in the food processor in the right order and giving them a whirl. Kaboucha contains more omega 3s and beta-carotene than almost any other plant-based food so eat up for perfect skin!
