Candied Kumquat Bubbles

Saturday was my 25th birthday and a celebration cocktail recipe was in order. My love of fresh sparkling cocktails inspired this particular birthday drink but my grandmother inspired the citrus garnish. My first kumquat experience included a trip to the grocery store with my grandmother Rosemary “tutu”. Without hesitation Tutu picked up a kumquat from a small basket on the produce counter and popped the little orange gem into her mouth. I decided to follow tutu’s lead and popped a kumquat into my mouth, tasting the bright acidic punch. I’ve always loved the fruit because it brings me back to memories of her. I made these cocktails at 11:00 am and drank one in her Honor, viola day drinking made pretty.

Candied Kumquat Bubbles


  • 1 bottle of sparking white wine (I like anything extra dry)
  • 1 little basket of kumquats
  • 6-10 sprigs of rosemary
  • 1 cup of sugar


  • Cut kumquats into thin rounds, put the rounds and any left over juice into a small bowl
  • Pour half of your sugar over the cut kumquats, cover, and set aside in the fridge for a few hours or overnight
  • Pour left over sugar onto a small plate
  • Wet just the rims of your champagne glasses and dip them rim side down onto the sugar plate, set sugar rimmed glasses aside
  • Uncork chilled sparkling wine and pour it into a glass vessel
  • Place sugar soaked kumquat rounds and their juice into the vessel of wine, stir thoroughly
  • Pour sparking wine mixture into your sugar rimmed glasses ¾ of the way full
  • Put about 4-6 candied kumquat rounds into each glass
  • Add washed rosemary sprig into glass
