Curried Carrot Cake

Carrot cake is an american classic, it’s moist and flavorful and usually full of skin busting ingredients:/ Carrot cake lends itself so well to a vegan #eattoglow preparation because it contains lots of fruit and veg moisture. This cake has a tiny spin to it’s classic counterpart because I added some Indian ingredients like curry and coconut milk. This cake is really tasty but you’ve gotta be willing to chill out with your grater for a hot minute or get a food processor. I hope all of you little bunnies out there enjoy this one!

INGREDIENTS

Cake
1 cup coconut milk
1/2 cup raisins
2 cups grated carrots
1 cup grated pineapple
1 tablespoon grated ginger
1 cup coconut flour

1/2 cup chopped pecans
1 cup brown rice flour
1/2 cup almond milk
1/2 cup monk fruit powder
1 lemon (juice and zest)
1/2 teaspoon salt
1 teaspoon curry power
1 teaspoon cinnamon
1 teaspoon nutmeg (fresh ground)
1 teaspoon cayenne pepper (optional)

Frosting
One cup pureed coconut
1/2 cup almond milk
1/2 cup monk fruit powder
One pinch salt
1/4 cup coconut milk

RECIPE

Preheat oven to 350

Literally add all cake ingredients into a large bowl and stir until incorporated

Grease two 9” pie pans and pour batter into pans (equal amounts in each pan)

Put pans into 350 oven, cook for 45 minutes (make frosting while the cake bakes)

Add all frosting ingredients into a food processor and blend on high until incorporated and fluffy (3 minutes)

Cover frosting and put frosting in the fridge

Remove cake from the fridge and set aside to cool (about 30 minutes)

Remove frosting from the fridge

Place one cooled cake onto a large plate

Spread a thick layer of frosting evenly onto the top of the cake

Place the second layer of cake carefully onto the frosted first layer

Spread the rest of the frosting evenly over the top of second layer of cake

Garnish cake with ¼ cup of additional chopped pecans by setting a medium sized bowl upside down in the middle of the cake

Sprinkle the pecans over the perimeter of the cake (with exposed frosting)

Carefully remove the bowl with your fingers

Artfully place pecans in the middle of the cake
