Sweet Potato Protein Loaf

Good morning my loves! As I’m sitting here at eight thirty in the morning finishing this post, I can honestly say the morning is my favorite time of day. The earlier I wake up the more uninterrupted ‘me’ time I have to prepare for my day. I’m also one of those girls who gets out of bed and immediately eat breakfast. I like to have something really quick and delicious ready to go as soon as I wake up, insert Sweet Potato Protein Loaf. When I get on a breakfast kick, I have been known to stick with it for years…my oatmeal kick lasted about 7. Over the past few months I’ve switched my obsession from oatmeal to high protein breakfast bread. I’ve been developing my perfect high protein, low sugar loaf recipe and I’ve finally hit the nail on the head. I hope you guys enjoy this recipe and make it a part of your blissful morning routine.

Sweet Potato Protein Loaf

INGREDIENTS

1 cup pureed sweet potato
1 cup almond milk
1/2 cup coconut oil
6 eggs
6 scoops protein powder (or whatever you like) LINK to my fav
1/2 teaspoon baking soda

One pinch of sea salt

RECIPE

preheat oven to 350
combine all ingredients in large bowl until well incorporated
grease a loaf pan
add batter to loaf pan and smooth top with a knife
cook at 350 for 45-55 minutes or until knife comes out clean

Allow loaf to cool for 10 minutes before cutting
truly enjoy

  2. Just the sort of recipe I’ve been looking for . Looks delicious! My husband is losing weight after coming off wheat and he does not like it. Can’t wait to make it once I get some protein powder.
