It’s almost thanksgiving and in honor of the holiday I partnered with Farmbox Los Angeles to create an updated version of the classic green bean side dish. This healthy  Green Bean Salad alternative to the classic mushy casserole is zesty and simple to make. The fresh local produce used in this recipe was delivered to my door by Farmbox LA. Farmbox Green Bean Salad

INGREDIENTS
-1 cup whole pecans
-4 cups green beans
-1/4 cup red wine vinegar
-1/4 cup olive oil
-Pinch of salt
-1/2 cup baby arugula
-1/2 cup sliced strawberries 1/2

RECIPE
-Turn oven to broil
-Place pecans on a cookie sheet and broil for 5 minutes (or until browned)
-Remove pecans from oven and set aside
-Add oil, vinegar, and salt to a small bowl and whisk until well incorporated
-Cut the green beans in half and cut the ends off
-Add green beans to a large bowl
-Cover green beans with oil and vinegar mixture, stir until all green beans are coated
-Cover green beans with plastic wrap and chill in the fridge for 1 hour, allowing vinegar to soften beans
-Remove beans from the fridge and mix in spliced strawberries, arugula, and pecans
