She makes fresh pasta sauce, salsa, and soup with the bountiful summer tomato harvest. I have zero green space here in Los Angeles so gardening is not in the cards for me, luckily the trader joes is close.lol Gazpacho is a easy way to utilize tomatoes, any recipe that allows you to toss a bunch of ingredients in a blender is ideal in the hot summer months. This recipe is ridiculously healthy, don’t feel guilty when you’re ladling second helpings into your mouth.
