Perfect Dairy Free Soft Scrambled Eggs

Just when I thought the “year that must not be named” couldn’t get any worse, my most well-loved kitchen appliance decided to break down on me, leaving me to forgo some of my favorite #eattoglow breakfast foods. 

Instead of sulking in despair, I decided to spend this blenderless season trying new recipes. One of them being the soft scramble, a creamy, dairy free, french-style scrambled egg.

In this post, I’ll share with you my perfect dairy free soft scrambled egg recipe and how my new favorite kitchen appliance helped me make it happen!

Perfecting the Soft Scramble 

It’s no secret that the soft scramble is a decadent breakfast food and can be challenging to make. That’s why I wanted to come up with a simple, easy way to make these delicious eggs. 

Perfecting a recipe for the soft scramble was anything but easy. It took me weeks to discover that the pan you cook with truly makes all the difference. I tried countless times with my cast iron pans and it left me with overcooked eggs that lacked that glossy Pinterest worthy finish.

For optimal soft scramble results, a nonstick pan is a must. However, these types of pans are often coated with toxic chemicals that can leak into your food! This led me to look for a healthy ceramic cookware company.

Ingredients 

(Serves 2)

-1 teaspoon avocado oil

-6 organic pasture-raised eggs 

-A sprinkle of flakey Maldon salt and fresh cracked pepper (optional) 

Recipe 

-Heat your GreenPan to low heat, if you have a stovetop dial with dots set to one notch up from the low setting.

-Crack your eggs into a large bowl and whisk well until frothy, your arm should feel like you did 10 pushups.

-Pour avocado oil into pan, coat bottom of the pan evenly by dragging a BPA free silicone spatula around the pan.  

-Add whisked eggs to the pan and constantly drag your spatula around the entire surface of the pan, cooking the eggs slowly for about 10 minutes or until the eggs are just slightly wet.

-Plate the eggs and garnish with your salt and pepper.

-Enjoy ASAP for the freshest tastiest eggs in town.
