Salted & coated cookie dough bites

It’s January and I’m posting desserts, controversial I know! Even though you may be trying to increase your health game this year, you probably still want a delicious treat every now and gain, am I right?? I promise this organic, gluten free, sugar free, grain free, no guilt salted & coated cookie dough bites recipe will support a healthy and happy 2020.

Coated & salted chocolate chip cookie bites

Recipe adapted from the Sweet Laurel Cook book it’s amazing, I highly suggest it if you like to bake!

Ingredients 

Cookie dough bites

1 1/2 cups almond flour 

1/2 cup coconut oil, melted 

1/3 cup powdered monkfruit sugar

1/4 cup sugar free chocolate chips 

1/4 teaspoon salt

1/4 teaspoon gluten free vanilla extract 

Coating 

1/2 cup sugar free chocolate chips

2 teaspoons coconut oil, melted 

1/4 teaspoon sea salt 

Recipe 

-mix all bites ingredients in a large bowl 

-roll batter into golf ball sized bites (9-10)

-chill bites in the fridge for an hour 

-melt chocolate chips, stir in coconut oil and salt 

-remove bites from fridge, set them on a cooling rack with a baking sheet underneath 

-spoon warm chocolate mixture over each bite until they are coated all over

*you will have to collect the excess chocolate from the baking sheet underneath the rack to coat all cookie dough bites 

-place coated bites on parchment or waxed paper and chill for an additional hour before eating. 

-store in an airtight container in the fridge for up to one week
