Healthy Citrus French Toast

Sharing a nostalgic one my loves, my ultimate childhood breakfast, the one I would ask my mama for time and time again. My mom was a single parent who worked full time and didn’t have much time to cook for me but she did make me this scrumptious citrus french toast. I took a few liberties, made a few swaps, and made this recipe #eattoglow aka sugar free, dairy free, nutrient dense, and delicious!

Mama’s citrus French toast 

(Makes 4 pieces)

Ingredients 

-2 eggs 

-1/3 cup alternative milk 

-The juice of 1/2 a medium orange and 1 teaspoon of the zest

-1 tablespoon lakanto sugar

-1/2 teaspoon cinnamon

-a pinch of fresh grated nutmeg 

-a pinch of salt 

-4 pieces of whole grain sprouted bread

Recipe 

-crack eggs into a large flat bottom bowl, whisk until fluffy 

-add in the rest of the ingredients omitting the bread

-add in bread one slice at a time saturating the bread with the liquid mixture until all the mixture is absorbed 

-allow the bread to sit at room temp for at least 15 minutes to let the French toast get soft

-heat a cast iron skillet to medium-low coat the pan with avocado oil

-cook each slice of French toast for 3 minutes on either side or until cooked to your preference 

-garnish with any goodies you’d like, I chose probiotic coconut yogurt (link to recipe) , orange zest, and Rachael Devaux’s paleo granola (link to recipe)
